It bakes up golden and crisp with just enough sweetness to feel like a treat without being overwhelming. Perfect when you want something homemade and seasonal without the fuss of a full pie.

The galette tastes like layers of buttery, crispy puff pastry with warm spiced apple filling. It has all the familiar flavors of apple pie but without the rolling, crimping, and long bake time. A cozy dessert with plenty of comfort built right in.

This is a great recipe to tuck into your fall baking lineup. It’s simple enough for a weeknight but still special enough to sit alongside your favorite Thanksgiving desserts. Quick to make and easy to share, it fits right in with seasonal gatherings.

What You Need To Make a Rustic Apple Galette

Make sure you’ve got these ingredients on your shopping list. The puff pastry keeps things quick and easy, while fresh apples and warm spices do the rest. Keep the puff pastry frozen until a couple of hours before baking this pie.

  • puff pastry sheet
  • apples (Honey Crisp or your favorite baking apple)
  • brown sugar
  • white sugar
  • cinnamon
  • nutmeg
  • egg

You can swap in apple pie spice or pumpkin pie spice to change the flavor slightly without adding extra steps. Either will give this galette a seasonal boost while still keeping it rustic and easy.

To Thaw Puff Pastry

Puff pastry typically comes in a box with two sheets. To thaw one (or two sheets of puff pastry) I like to open the box and the paper bag they’re in and remove a sheet of pastry. Slide it into a resealable plastic bag.

At this point, you can put it in the fridge overnight to let it thaw. Fridge thawing is nice because the best way to thaw it is to keep it chilled.

If you need it sooner, put it in the bag and then lay it on the counter to thaw. In a warm house, counter thawing takes 2-3 hours. Do not warm it up, and if it starts to feel warm, put it in the fridge to chill it. Warm puff pastry will not puff up; all the butter will leak out of it.

If You Have Leftovers

Leftovers can be wrapped and kept in the refrigerator for up to three days. Warm them in the oven or air fryer for the best texture.
