What You Need To Make a Rustic Apple Galette
Make sure you’ve got these ingredients on your shopping list. The puff pastry keeps things quick and easy, while fresh apples and warm spices do the rest. Keep the puff pastry frozen until a couple of hours before baking this pie.

- brown sugar
- white sugar
- cinnamon
- nutmeg
- egg
You can swap in apple pie spice or pumpkin pie spice to change the flavor slightly without adding extra steps. Either will give this galette a seasonal boost while still keeping it rustic and easy.

To Thaw Puff Pastry
Puff pastry typically comes in a box with two sheets. To thaw one (or two sheets of puff pastry) I like to open the box and the paper bag they’re in and remove a sheet of pastry. Slide it into a resealable plastic bag.
At this point, you can put it in the fridge overnight to let it thaw. Fridge thawing is nice because the best way to thaw it is to keep it chilled.
If you need it sooner, put it in the bag and then lay it on the counter to thaw. In a warm house, counter thawing takes 2-3 hours. Do not warm it up, and if it starts to feel warm, put it in the fridge to chill it. Warm puff pastry will not puff up; all the butter will leak out of it.

If You Have Leftovers
Leftovers can be wrapped and kept in the refrigerator for up to three days. Warm them in the oven or air fryer for the best texture.

Rustic Apple Galette
Ingredients
- 1 sheet puff pastry
- 3 large apples
- 1 tbsp brown sugar
- 1 tbsp white sugar
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 egg
Instructions
- Lay the puff pastry sheet out on parchment paper or foil

- Gently roll out the sheet of puff pastry to enlarge it ever so slightly
- Trim the dough into a circle (bake the scraps separately for a tasty treat!)
- Slide the sheet of parchment onto the baking sheet and set aside
- Mix the brown sugar, white sugar, cinnamon, and nutmeg in a small bowl and set aside

- Peel and slice the apples as if for pie
- Place the apples in a mixing bowl and toss with half of the sugar and spice mix
- Arrange the apples in the center of the puff pastry and sprinkle with the remaining sugar and spices

- Fold the edges of the puff pastry over the apples into a rough circle

- Whisk the egg in a small bowl and brush the pastry with a light, even egg wash
- Bake at 425°F (220°C) for 25–30 minutes until the apples are tender and the pastry is golden brown

- Cool slightly before slicing and serving
