This is the kind of dinner you make when you want something easy that still feels like a real meal. Everything goes on one pan and cooks in the oven while you do something else. Sheet pan dinners take the pressure off and keep cleanup simple. It’s a solid go-to when you don’t want to think too hard about dinner.

You get smoky sausage with crispy potatoes and roasted vegetables all in one bite. The edges of the potatoes brown up while the sausage gets a little toasted. The peppers and onions soften and pick up all the seasoning. It’s simple, filling, and comes together without much effort.

Ingredients For Sausage Sheet Pan Dinner

The ingredient list looks long but it’s mostly common spices and herbs you probably already have. Choose any sausages you like or prefer, kielbasa is easy to find and everyone likes it but you should use what you like.

  • red bell pepper
  • yellow onion
  • oil
  • Italian seasoning
  • paprika
  • salt
  • black pepper
  • garlic powder
  • onion powder
  • red pepper flakes(optional if you like heat)
  • kielbasa

Change It Up

Swap the potatoes for sweet potatoes if you want a slightly different flavor. Orange sweet potatoes or Japanese sweet potatoes both work well in place of the yellow potatoes.

Use any cooked sausage you have on hand or can find at the store, it doesn’t have to be kielbasa. Beef, pork or chicken sausages work great here.

You can also toss in extra vegetables if you need to use them up. Just think about how long it takes for each vegetable to cook and cut it and cook them accordingly.

Got Leftovers?

Store leftovers in a covered container in the fridge for a few days. Reheat in the oven or a skillet to bring back some of the texture. The microwave works too if you just need it quick. It’s a good option for lunch the next day.

Ingredients

  • 8 oz yellow potatoes diced
  • 1/2 red bell pepper chopped
  • 1/4 medium yellow onion chopped
  • 1/2 tbsp oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Pinch red pepper flakes optional
  • 8 oz kielbasa sliced

Instructions

  • Preheat the oven to 375°F
  • Add the diced potatoes chopped bell pepper and onion to a bowl

  • Drizzle with oil and toss to coat
  • In a small bowl mix Italian seasoning paprika salt black pepper garlic powder onion powder and red pepper flakes if using

  • Sprinkle over the vegetables and toss to combine
  • Spread the mixture evenly on a baking sheet

  • Roast for 15 minutes
  • Slice the kielbasa into rounds
  • Remove the pan from the oven and add the sausage
