This Croissant Breakfast Sandwich has everything you want in one bite—warm, buttery croissants, a protein-packed sausage patty, soft scrambled eggs, and just enough melted cheese to hold it all together. It looks like something you’d order out, but it’s easy enough to make at home. Whether you’re feeding a few people or stocking the fridge, this one delivers.

This recipe layers scrambled eggs, brown and serve sausage patties, and Colby Jack cheese on croissants, then finishes them in the oven for a warm, melty breakfast. The everything bagel seasoning on top adds a little extra crunch and flavor. It’s easy to prep and even easier to eat.

Make this for a laid-back weekend breakfast, holiday brunch, or a quick weekday meal if you prep ahead. It’s also a great option when you have guests and want something hearty without a lot of effort.

If you’re a Costco shopper, the premade croissants from the bakery are perfect for this recipe. I know that 12 is a LOT of croissants for a small household but hear me out. Buy a box, enjoy a few, and then you can freeze them for later!

Just lay the extra croissants on a cookie sheet to freeze. Once frozen, pop them in a ziploc freezer bag and back in the freezer they go. They will last 2-3 months in the freezer like this.

How To Change It Up

Try making the two-ingredient air fryer bagels instead of buying croissants. They’re super and taste amazing!

Swap in bacon or homemade sausage patties if you like. Whatever you choose to use, just cook it before you add it to the sandwich. Use the air fryer for cooking breakfast meats, it SO easy to do!

You can also skip the meat altogether for a meatless option. Not a fan of spinach? Leave it out—it works just fine without it.

Storage and Meal Prep

Wrap leftovers tightly and store in the fridge for up to 3 days. Reheat in the oven or air fryer for a quick, no-fuss meal-prep breakfast.

Ingredients

  • 4 large croissants storebought, premade
  • 4 brown and serve breakfast sausage patties
  • 4 slices Colby Jack cheese
  • 6 large eggs
  • 1 1/2 cup fresh spinach
  • 2 tbsp unsalted butter
  • 3 tbsp milk
  • ½ tsp salt
  • ½ tsp pepper
  • 1 1/2 tbsp everything bagel seasoning optional, you can totally leave it off

Instructions

  • Cook the sausage patties in the air fryer at 350°F (175°C) for 10 minutes
  • meanwhile: preheat the oven to 350°F (175°C) and lightly grease a baking dish with non-stick spray
  • Whisk the eggs, milk, salt, and pepper in a medium bowl until fully combined

  • Heat 1 tbsp of butter in a skillet over medium-high heat
  • Add the egg mixture and cook, stirring occasionally, until scrambled and cooked through

  • Slice the croissants in half and place the bottom halves in the prepared baking dish

  • Add a sausage patty and a slice of cheese to each sandwich

  • Place the croissant tops over the layers

  • Melt the remaining 1 tbsp of butter in the microwave
  • Brush melted butter over the tops of the croissants
