Chicken Ingredients

  • 12-14 oz chicken breast cut into bite-sized pieces–this is flexible it can weigh up to one pound
  • 3/4 cup Greek yogurt
  • 1 1/2 tbsp olive oil
  • 3/4 tbsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 3/4 TBSP oregano
  • 3/4 tsp paprika

Greek Yogurt Dressing

  • 3/4 cup Greek yogurt
  • 1 1/2 TBSP olive oil
  • 1 TBSP minced garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 TBSP lemon juice
  • 3/4 TBSP dill chopped
  • 1 1/2 TBSP water

Salad Ingredients

  • 3/4 cup pecans roughly chopped
  • 3/4 cup strawberries halved
  • 3/4 cup blueberries
  • 2-3 cups romaine chopped
  • 2-3 cups spinach
  • 1/2 cup feta cheese

Instructions

  • In a large mixing bowl, combine the yogurt, minced garlic, oregano, salt, pepper, and paprika

  • Submerge the chicken in the mixture and let it marinate for 30 minutes or up to overnight
