Chimichurri shrimp is a bold, fresh, quick dish that brings big flavor to your kitchen. And because it’s a small batch recipe, you won’t be overrun with leftovers.

Chimichurri is a vibrant herb sauce from Argentina, made with parsley, garlic, red wine vinegar, and chili flakes. It’s tangy, garlicky, and slightly spicy. This chunky herb sauce paired with savory shrimp makes for a bright contrast of flavors.

What You Need To Make Chimichurri Shrimp

This recipe calls for some specific ingredients, so be sure to make a good shopping list so you’re not left in the lurch when you start cooking.


Chimichurri Sauce:

  • olive oil
  • Italian parsley
  • salt
  • pepper
  • oregano
  • minced garlic
  • red chili flakes
  • red wine vinegar

Shrimp:

  • jumbo shrimp-you can use smaller shrimp if you like
  • paprika
  • salt
  • pepper
  • garlic powder
  • olive oil

You Can Change Up This Recipe

If it were me, I wouldn’t change up the chimichurri recipe too much. The ingredients are classic and make the perfect sauce.

If you like cilantro, you can add some to the sauce. A lot of people like chimichurri with cilantro, and it makes a great addition to the sauce.

You can add more heat and spice to the recipe by adding a fresh hot chili pepper to the sauce. Something like a Thai pepper cut in rings and stirred into the sauce adds nice heat. Or go for heat from red pepper flakes or cayenne pepper.

Pair This With

This dish is great over rice, quinoa, or a simple salad. Serve it with warm tortillas for shrimp tacos or alongside roasted potatoes for a heartier meal.

Make this into a light appetizer, serve it with crusty bread for soaking up the extra sauce. You can either put the shrimp on toothpicks or cut the shrimp into smaller pieces and mix it with the chimichurri sauce.

Ingredients

Chimichurri

  • ½ cup olive oil
  • ½ cup Italian parsley chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  • 1 tbsp minced garlic
  • 1 tsp red chili flakes
  • 2 tbsp red wine vinegar

Shrimp Ingredients

  • 1 lb jumbo shrimp peeled and deveined (tail on)
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp garlic powder
  • 2 tbsp olive oil

Instructions

  • Add all of the chimichurri ingredients to a medium bowl. Mix well and set aside

  • Add the shrimp to a separate bowl and season with paprika, salt, pepper, garlic powder, and 1 tbsp olive oil

  • Heat a skillet over medium-high heat with the remaining olive oil.
  • Once hot, add the shrimp and cook for 1 to 2 minutes on each side until done.

  • Do not overcrowd the pan. Cook in two batches if needed

Notes

For extra flavor, marinate the shrimp in the seasoning for 15-30 minutes before cooking.
