This Loaded Mashed Potato Casserole is the perfect side dish because it’s so good that it works with every main dish. And you WANT to make it because it’s just that irresistable.

This is an easy recipe you can make with leftover mashed potatoes or the two-serving instant mashed potato packets. Either one works just fine and tastes great with all the tasty additions we’re adding.

A little onion and garlic powder are needed to start this recipe on the right foot. Then we add a mix of shredded cheese. I use sharp and white, but you can use whatever cheese you happen to have on hand. Swiss cheese is particularly tasty with mashed potatoes, if you have it try it!

Add a little sour cream, bacon bits and green onions, and these little single-serve casseroles are ready to get toasty warm in the oven. If you have fresh parsley, a pinch on top of the finished casserole is a nice touch but not necessarily needed.

What You Need To Make Mashed Potato Casserole

This recipe leans heavily on having leftover mashed potatoes. If you don’t have leftovers, you can make instant mashed potatoes and use them. I do instant mashed potatoes all the time.

  • hot mashed potatoes
  • sour cream
  • garlic powder
  • onion powder
  • cooked bacon can be real bacon bits or leftover bacon
  • shredded cheese, cheddar, sharp cheddar, swiss, use your favorite
  • salt
  • pepper
  • 2 small casserole dishes or small overproof Pyrex dishes, 1-1/4 cup size

Got Leftovers?

You probably won’t because this recipe perfectly feeds two. But if you do have leftovers, simply cover them tightly and store the extra casserole in the fridge. Reheat as desired in the microwave, oven or air fryer. The air fryer is so quick and easy that it’s our preferred method for reheating these days.

Equipment

  • 2 oven-proof casserole dishes

Ingredients

  • cooking spray or butter for the baking dishes
  • 2 cups mashed potatoes heated up
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese use any shredded cheese you like
  • 2 TBSP crumbled, cooked bacon
  • 1/4 tsp garlic powder
  • pinch onion powder
  • pinch salt taste add more as desired
  • pinch pepper taste add more as desired
  • 1 tsp minced parsley optional

Instructions

  • preheat the oven to 350°
  • lightly oil the baking dishes
  • add the hot potatoes and everything else to a mixing bowl and stir to combine
  • taste the mixture, add more garlic, onion, salt and pepper as desired
  • divide the mixture between the baking dishes
  • lightly cover with foil and place on a small baking pan
  • bake for 25 minutes, remove the foil and bake for 5 more minutes
  • sprinkle with minced parsley before serving if desired
