cooking spray or butter for the baking dishes 2 cups mashed potatoes heated up 1/4 cup sour cream 1/2 cup shredded cheddar cheese use any shredded cheese you like 2 TBSP crumbled, cooked bacon 1/4 tsp garlic powder pinch onion powder pinch salt taste add more as desired pinch pepper taste add more as desired 1 tsp minced parsley optional
preheat the oven to 350°
lightly oil the baking dishes
add the hot potatoes and everything else to a mixing bowl and stir to combine
taste the mixture, add more garlic, onion, salt and pepper as desired
divide the mixture between the baking dishes
lightly cover with foil and place on a small baking pan
bake for 25 minutes, remove the foil and bake for 5 more minutes
sprinkle with minced parsley before serving if desired
