Typically, the recipe features heavy cream and cheese in the sauce, but that won’t work in the crock pot. So, we’ve devised this version that delivers on flavor and works in the slow cooker.
What You Need to Make Marry Me Chicken in the Crock Slow Cooker
You don’t need anything particularly special to make marry me chicken.
- chicken breasts or cutlets
- sun-dried tomatoes, both the tomatoes and the oil they come packed in
- chicken bouillon
- water
- flour
- garlic powder
- black pepper
- Italian seasoning
- paprika
- salted butter
- grated fresh parmesan
- slow cooker
- garnishes of fresh basil and parmesan
To Thicken The Gravy
As things cook in the slow cooker with the lid on, they don’t lose any moisture, whether added or gained from cooking. So, things can get rather watery. Even with flour added to the recipe, you’ll need to thicken the gravy before serving.
In this recipe, we’re thickening with cornstarch. To make it smooth, you want to mix the cornstarch with cold water first. Then, add a scoop of hot gravy from the slow cooker. Mix until smooth, slowly add it to the crock, and whisk to combine.
If you just add cornstarch to hot liquid, it can and will seize up. And make your gravy lumpy. So use the method described above so you don’t seize up your cornstarch

Slow Cooker Marry Me Chicken
Equipment
- slow cooker
Ingredients
- 3 chicken breasts large, boneless, skinless
- 2 tablespoons oil oil from jarred tomatoes
- 2 teaspoons chicken bouillon seasoning
- 2 cups water
- 3 tablespoons flour
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- 1/3 cup sun dried tomatoes drained
- 2 tablespoons salted butter
- 1 TBSP cornstarch
- 1/2 cup shredded or grated fresh parmesan save half for garnish
- optional fresh basil for garnish
Instructions
- cut the chicken breast in half to make thin cutlets
- pan sear the chicken in a skillet for 2-3 minutes on each side, with the herb oil drained from the sun-dried tomatoes
- remove the chicken and then carefully heat the skillet to medium heat to avoid burning the herbs in the oil.
- stir the flour into the oil then add the bouillon seasoning and water and whisk, in the spices, whisk until smooth
- pour the mixture into the slow cooker, add the chicken, butter, and sun-dried tomatoes.
- cook on high for 4 hours or low for 6-8
- one hour before serving remove the chicken and set aside
- whisk the corn starch with a little cold water, then add a scoop of the gravy from the slow cooker and mix until smooth
- whisk the corn starch slurry into the slow cooker and cook and stir until the sauce starts to thicken
- return the chicken to the cooker to reheat and smother
- sprinkle with fresh parmesan before serving
- serve over desired pasta and garnished with fresh chopped basil and more parmesan as desired
