Italian Grinder

The perfect sandwich is right here! This Italian Grinder is full of flavor and easy to throw together for one or two. It’s everything you want in a classic sub without the waste of a family-size meal. Great for lunch, dinner, or even a quick meal prep option.

This sandwich layers meats, cheeses, and fresh veggies all on a soft hoagie roll. The oil and vinegar dressing adds just the right punch, and a little Italian seasoning brings it all together. It’s a solid, reliable bite every time.

Make It Budget-Friendly
There’s no need to go to the sub shop when you make this easy sandwich at home, and save yourself time and money. And I don’t know about you but low cook or no cook meals are where I am some days. I don’t want dishes, I don’t want the oven, I just want something quick and easy, and budget-friendly.
Buy the meat for four sandwiches all at once. Lay out the meat on a foil or plastic wrapped tray and freeze it. Then slide the frozen pieces into a freezer bag or container and freeze until ready to use. Let one thaw for a couple of hours in the fridge, and you’re just about ready to make a sandwich, asap. You can also freeze the hoagie rolls in a freezer bag. And likewise, the cheese slices can be frozen, too.

What You Need To Make An Italian Grinder At Home
Grab the ingredients ahead of time to make sandwich night smooth and quick. Having everything on hand means no last-minute store runs and fewer skipped meals.
- hoagie roll
- shaved ham
- salami
- pepperoni
- provolone cheese
- mozzarella cheese
- tomato
- shredded lettuce
- Italian seasoning
- red wine vinegar
- olive oil
- cracked black pepper
How To Change It Up
Swap in roast beef, turkey, or chicken if that’s more your style. Use one or all of them, make it a sandwich you’ll love.
Try cheddar, Swiss, or pepper jack in place of the provolone and mozzarella. Use what you have on hand, or swap in your favorite cheeses.
You can even skip the roll and make it a chopped salad for a lower-carb version. Just lay the ingredients, meat, cheese, and vegetables on a clean cutting board, and chop it up. Place the chopped salad in the bowl, drizzle with the oil and vinegar, and sprinkle on the Italian seasoning and black. Mix it together and you have a sub in a tub.
Store leftovers
This sandwich is best fresh, but it works well as a packable lunch. Assemble it ahead without the oil and vinegar, then add those just before eating. It won’t hold more than a day. After that, the bread gets soggy.
The aforementioned sub in a tub is a great way to take this to work or meal prep with it. Prepare as described above. Put liquids in a small container. Put everything into a meal prep bowl and you’ve got a great low-carb lunch.
