Oven Fried Chicken for Two
Crispy, crunchy Oven Fried Chicken is one of our favorite chicken dinners. And it is so easy to make! And perfect any time you’re yearning for easy fried chicken at home.
Plus, there’s no mess from pan frying or deep fat frying when you make it in the oven. Oven fried refers to the fact that it’s rolled in melted butter and bread crumbs. Any leftover butter is drizzled over the top of the chicken. So it “fries” up in the oven.
What do I need to make Oven Fried Chicken
Put the ingredients you don’t have on your shopping list, and let’s make this chicken.
- boneless skinless chicken thighs
- Progresso Italian Style Bread Crumbs
- paprika
- garlic powder
- onion powder
- salt
- Italian seasoning
- melted butter
The Italian seasoning you want to use is a combination of dry herbs containing basil, oregano, rosemary, marjoram, and thyme. We’re not looking for the dry powdered “Italian Seasoning Salad Dressing Mix.” There’s been confusion before, so I thought I’d nip it in the bud.
How to Change It Up
This easy little recipe is endlessly customizable. You can always add seasoning, herbs, or spices to a recipe to see how you like it. This is a basic recipe, and I do expect that everyone has different tastes and that you’ll make this recipe yours! So if you like it spicy, make it spicy.
Here are a few ways to customize this recipe:
- add a pinch of cayenne pepper to the paprika
- use smoked paprika instead of regular
- add more or less garlic powder as desired
- use vegetable oil instead of butter
- go all out and add a spice flavor blend such as cajun, lemon pepper, or ranch instead of the Italian

This chicken can be stored in the refrigerator for up to three days. Store it in an airtight container for best results.
Oven Fried Chicken
Ingredients
- 2 chicken thighs boneless, skinless
- 1/4 cup bread crumbs Progresso Italian Bread Crumbs
- 1/2 tsp salt
- 1/2 tsp Italian seasoning
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 TBSP butter
Instructions
- preheat oven to 375°
- line a small baking sheet with aluminum foil
- mix the bread crumbs, herbs, and spices together
- melt the butter
- pat the chicken dry
- coat one thigh in the chicken with butter
- press the coated chicken into the bread crumbs mixture, flip and coat the other side
- place the chicken on the prepared baking sheet
- repeat with the other chicken thigh
- if there are any places where the crumbs didn't stick press some leftover crumbs on the spot
- don't pour the remaining crumbs over the chicken, it can keep the crumsb from crisping up
- drizzle any leftover butter over the top of the coated chicken
- bake the chicken at 375° for 20-24 minutes or until the chicken is cooked through, or a digital thermometer ready 165°
- serve hot
