The garlic, rosemary, lemon (zest and juice!), onion, salt, pepper, and oil make a delicious marinade. A sprinkle of paprika lends it a little color. Everything works together to give you lemony garlic in every bite!

I made chicken wraps with these, but you don’t have to. You can serve this chicken any way you like. I used Greek Pita Breads, lettuce, tomato, tahini and sour cream.

What Kind of Chicken Do I Need?

This recipe uses chicken tenderloins. Boneless, skinless chicken breasts work as well. Just cut them like you cut them for cutlets (directions below), so they cook quickly without getting tough and dry.

If you prefer dark meat, you can swap out the tenderloins for boneless, skinless chicken thighs. You won’t cut thighs into cutlets, so cooking will take longer.

No Tenderloins? Buy Cutlets or Cut Chicken Breasts Into Cutlets

To have cutlets that cook quickly, you will want to either buy cutlets or cut them. To cut them, lay them flat on a cutting board and put your hand on top. Using a sharp knife cut parallel to your hand, divide them into two equal cutlets the size of a chicken breast that is just half as thick. For more information, read up on making chicken cutlets.

Got Leftovers?

GREAT! This chicken makes great leftovers. But since you’re just starting with a small amount of chicken, chances are that you won’t have leftovers. If you have leftovers, reheat them in the air fryer or microwave.

You can cut up any leftovers and make a flavorful chicken salad or serve it on a bun for a unique twist on a chicken sandwich.
