Lemon Garlic Chicken

Ingredients
  

  • 2 TBSP oil we use light cooking oil
  • 1 lemon you will need some juice and zest
  • 1 tsp dried rosemary
  • 1 clove garlic minced
  • 1/2 tsp onion powder or granules
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 pound chicken tenderloins

Optional Ingredients to make Lemon Chicken Wraps

  • 2 Greek Pitas
  • lettuce
  • tomatoes
  • sour cream
  • tahini

Instructions
 

  • make the marinade: Mix the oil, 2 tsp lemon juice, garlic, rosemary, onion powder, 1 tsp lemon zest, salt, and pepper together
  • pat the chicken dry and put it in a flat bowl
  • pour the marinade over the chicken
  • turn to coat
  • cover and refrigerate for at least one hour but up to 4 hours works great too
  • when you're ready to cook preheat the air fryer to 400° for five minutes
  • shake off the extra marinade and place the tenderloins in the basket of the hot air fryer
  • air fry on 400° for 12-15 minutes or until the chicken is cooked through, you can check for doneness by using a digital thermometer it should read 165° to be well cooked
  • if making sandwiches wrap the pitas in foil and warm in a hot oven or toaster oven for 5 minutes or so just until warm, serve the chicken on top of the warmed pitas, with lettuce, tomatoes, tahini and sour cream as desired
