You can top these bean and rice bowls any which way you want to. Our family loves shredded cheese, tomatoes, lettuce, avocados, and sour cream. BUT add toppings to your bowls as desired such as:

  • salsa hot or mild
  • chopped onions
  • chopped green onions
  • shallots
  • taco sauce
  • greek yogurt
  • chopped cilantro
  • corn chips
  • cotija

Use Leftovers!

Use up leftovers in these bowls. Because you’re going to be making these, especially for you , with the toppings you choose, why not also change up the main parts of these burrito bowls?

You can swap out the cooked pinto beans with refried beans or chili. Add leftover cooked meats such as beef, chicken, or taco meat.

And for the rice? Use leftover cooked rice. Or small packets of quick cooking rice, leftover rice, instant rice or any other kind of rice you want or have access to. Even sprouted quinoa you heat in the microwave will work.

Meal Prep These Burrito Bowls

If you need to meal prep these easy burrito bowls are perfect for that. Simply assemble the rice and beans portion in divided lunch containers, add toppings to the other, and refrigerate for up to 3-4 days.

If freezing for later use assemble the beans and rice in 2-compartment containers and freeze. Thaw before taking to work and add toppings to the second compartment or pack the toppings separately.

Ingredients
  

  • 1 1/2 cups cooked rice can be any kind of rice you have or want to use
  • 15 1/2 ounce can Ranch Beans or use any beans you prefer, be sure to get some with seasonings or flavor in them
  • 1/2 cup shredded sharp cheddar cheese
  • 1 cup chopped lettuce
  • 1/2 cup chopped tomatoes
  • 1 avocado, chopped
  • 2 TBSP sour cream

Instructions
 

  • heat the rice until hot and divide between two bowls
  • heat beans and divide between the two bowls of rice
  • top with cheese, lettuce, diced tomato
  • cut the avocado in half, pit it, and cut in chunks and add to the top of the bowls
  • top with sour cream
  • serve with your favorite taco sauce, pico de gallo, or salsa
