Homemade apple pie without the fuss! This small-batch recipe uses flaky puff pastry for a quick and easy take on a classic dessert.

Ingredients

  • 3 apples for 3 cups peeled sliced apples
  • 1/3 cup brown sugar
  • 1 tbsp all-purpose flour
  • 1/2 tsp cinnamon
  • pinch of nutmeg optional
  • pinch of ground ginger optional
  • pinch of ground cardamom optional
  • 1/2 sheet puff pastry thawed
  • 1 egg for egg wash

Instructions

  • Preheat the oven to 400°F (200°C)
  • Lightly butter a 6-inch pie pan and set it aside
  • Peel and slice the apples, then place them in a bowl
  • In a small bowl, mix the sugar, flour, and spices together
  • Sprinkle the mixture over the apples and toss to combine

  • Transfer the apple mixture into the buttered pie pan

  • Unfold the sheet of puff pastry and cut it about one inch larger than the top of the pie pan (save the rest and the trimmings!)
  • Lay the pastry over the apples and crimp the edges to seal

  • In a small bowl, beat the egg with 1 tablespoon of water

  • Brush the egg wash evenly over the puff pastry
  • Bake for 35-40 minutes, or until the top is golden brown and the juices are bubbling
  • Remove from the oven and place on a cooling rack

  • Serve warm or cool with ice cream, whipped cream, or a drizzle of heavy cream

Notes

You can also use apple pie spice or even pumpkin pie spice for this recipe--they're almost the same thing and the warm spices work with either apples or pumpkin
